Default Pepperoni

I decided t0 try making pepperoni, using a recipe from Morton Salt with their tender quick curing mix.
The result is good after 3 days curing and 6 hours smoking EXCEPT, the amount of tender quick is way too much salt for my taste, I believe 1/2 TBSP would have been about right and I shall try that next.
Having mustard seed and whole peppercorns on hand resulted in a very good flavor mix.
The 1 tsp of my crushed red pepper worked well, too.
This was with a 1 lb trial batch, may go for a bit larger batch next time and intend to try it with my home made sugar cure, too.
So many sausages, so little room to eat them all!!!
