Default Light lunch

I had a light lunch today,sugar cured, hickory smoked pink salmon with a bit of horseradish on mixed grain crackers and with a small glass of red wine on the side.
Last time I tried salmon, I got what was supposed to be fresh, wild caught, Alaska salmon, but when I asked Gitano about it, he said it was at least 3 months too early, so I do not know what I had, it did come out pretty good.
This was labeled Chile farm raised pink salmon, I almost cooned it after smelling it, but after removing the packageing and rinsing it, I decided to try it.
It is not as good as the other batch, but it is not objectionable and is pretty good after curing and smoking.
