Stuffed chicken breast

When fishing for girls,  you need better bait than worms or grubs.  Here's a recipe that worked for me:
 
Ingredients:
 
Chicken breast (one each if hungry,  one between you if not)
Sundried tomato
Red Pesto
 
Two or three plums
One or two desertspoons of sugar
Salt *shrugs - however much you like - but compulsory*
Water (enough to make "watery")
 
.....the above is in two parts because you have the main meal and the sauce.  Firstly,  slice your breast/s down the side so they are still connected on the far edge.  add a knifefull of red pesto and spread on the inside like it's butter.  Chuck some slices of sundried tomato in (about three per breast from memory).  Put in the oven at 180 degrees celsius (no idea what that is in farenheit) for about 15 - 20  minutes,  until juices run clear when pierced.
 
.....in the meantime,  destone and put plums in blender,  then chuck in a pot with about a cup or so of water and bring to boil.  Turn down and simmer,  and add sugar and salt to taste.  Remember folk - salt is a flavour enhancer,  so is your friend.  Keep stirring,  and add extra water if starts getting too thick. (nb - this sauce works on fish too believe it or not).
 
Serve the whole lot with a nice side salad - and with shallow fried scallops if you are feeling rich or know someone with a scallop dredge.
Normality is for the weak.
