Hot Venison Breakfast Sausage

This recipe is Hot off the press....................

7 lbs of ground deer
3 lbs of ground pork

1/3 oz. ground sage
1/2 oz. ground black pepper
1-1/2 oz. course ground or crushed cayenne pepper
Salt generously

Makes 10 lbs. of lean hot breakfast sausage.......
Hot enough to set your arse on fire'ra yet not enough to bring tears to
your eyes.....use medium or low heat to fry as it is still a lean sausage...

BH, looks good.  Do you make links out of it, or just mix it, seperate it, and freeze as patties??????
 
I have about 8-10 pounds of elk chunks in the freezer I need to grind up, and hopefully, am getting a small hand grinder for Christmas..... :biggthumpup:

I put small portions in zip-locks, flatten the air out of them and freeze it..
About a lb. or so in each....I'm gonna get my hands on some sausage
casings and add some peppercorn to that recipe eventually...but for now I
simply pat-out some patties when needed...............................................BH51...
