Sopa seca, or mexican rice

In a large skillet, put 3 tbsp of oil and 1 cup of rice, over medium low heat, cook until light  brown, stirring often. Add salt, pepper, comino and groung cayenne to taste. Hamburger or diced meat or chicken can be added as well, when lightly browned add 1/2 cup chopped onion and 1 or 2 garlic cloves, continue stirring until onion is clear, if you wish, add a small amount of english peas and /or frozen corn kernels for color.
put 2 cups of water in skillet, put on a tight lid, put on simmer and cook 25-30 minutes until rice is moist but no liquid remains.
Serve with home made corn tortillias and salsa picante,preferably, not made in "New York City"
