Texas cornbread

;) This is a recipe for an 8" castiron skillet worth, just double to make it for a 10" castiron skillet.
The 8" skillet is enough for 4 people, unless one is a teenage boy.
1 cup of cornmeal, I like stone ground whole grain.
!/4 cup flour, I use whole wheat flour.
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp salt
1 egg
1 cup buttermilk
1/4 stick of butter
mix dry ingredients, add egg and buttermilk.
In a well broken in cast iron skillet, melt the butter over medium low heat, being sure to coat the sides.
Have the oven warming up to 375', pour the batter in the hot skillet, cook about 25 minutes, or until the top is nicely browned, cut in 8 slices for 4 adults or 1/2 for a teen age boy and divide remainder for 2 adults.
